Tom kha night!

OK, open invitation to my house tonight for a generous bowl of tom kha.
This is the world's easiest Thai soup as far as I am concerned, and it can take on numerous ingredient variations and still be delicious. I don't make it that often because one of the major ingredients is coconut milk... but seeing as how it's been about a year since the last batch, IT IS TIME.

Tonight's variation will involve tom kha paste, light coconut milk, chicken thighs, mushrooms, green onions, maybe some bamboo shoots, and some Thai basil and a ripe tomato thrown in at the last minute. Served over hot jasmine rice to soak up all the savory goodness.

I'll just need a head count. And maybe an emergency bring-your-own bowl, just in case we run out of our china.

My favorite! Unfortunately I cant' spare the 8 hr drive right now. I had no idea that I could buy Tom Kah sauce. i shall have to look for it.

Tom kha paste makes it a whole lot faster and easier. I usually buy Lobo brand, but there are several kinds on the market.

This particular batch was good, but could have used a little more paste. And maybe some lime juice. Still, nom.
